Tasting Note: Balsamic notes of wild and aromatic herbs intermixed with floral and pollen notes and a hint of nuts. The palate reveals very fine polished tannins and a volatile twist that gives it some freshness.

Description

Starting with just three hectares in 1999, David Sampedro, a vigneron from Elvillar in Rioja Alavesa, converted his vineyards to organic farming, revealing a unique side of Rioja. Today, he and his wife Melanie manage 17 hectares of certified organic and biodynamic (Demeter) Estate vineyards, cultivated exclusively by plow-horse. In 2016, they built a sustainable, solar-powered, off-grid winery near their village. David’s forward-thinking vision, focused on biodynamics and expressing the limestone soils and old, high-altitude vines of Elvillar, sets him apart in the region.

Sourced from the 0.68 hectare clay and limestone soil La Revilla vineyard. Planted in 1925, each vine driven by a stake and Biodynamically farmed by horse. The grapes were hand-harvested in 10 kg cases and partially destemmed and then foot trodden to gently extract the must where fermentation takes place spontaneously. The wine was then pressed and transferred to used 225-liter oak barrels, where the wine matured for six years. The wine was racked two times during the aging process.
