Tasting Notes: Dark cherries, blackberry, chewy nougat, roasted coffee, red capsicum, lightly spiced oak. Refreshing length, super easy drinking, not always something said about Cabernet. Still, there is good flowing structure here and weaving tannins for medium term ageing or with food right now!

Winemaking
The Cabernet fruit was machine-picked and delivered to the winery April 4 (Sand Road 3.78 tonnes) and April 24 (Hillenvale 8.16 tonnes), destemmed and crushed to round open top stainless fermenters. Once fermentation had commenced the must was pumped over only once
every 24 hours. Primary fermentation took place for 14-16 days, aiming for gentle extraction and silky texture. Once the wines were dry, they
were pressed to tank where the free run juice and pressings were combined, then transferred to 3-4 year French 400 litre puncheons.
After 30 months, the wines were racked off lees and we did the blend of the two vineyard parcels, then transferred to tank for integration prior to bottling on February 17, 2026. Sealed under Stelvin screwcap (PVDC
free), 415g lightweight recycled glass bottle, 897 dozen produced. Certified Sustainable Winegrowing Australia, and vegan-friendly wine.
